Workshop Wine

Aromatic, yet delicate. The wine is subtle with ripe red fruits and herbal, spicy notes weaving through the fruit. The palate is soft with fruit, and the acid is brisk, which brightens up the finish. 

One ton of fruit was split based on fruit ripeness during our tedious sorting process. The less ripe fruit went into last year's rose release, and the more ripe fruit went into this. Whole cluster with a little cold soak and extended maceration, this wine saw 16 months in neutral barrique. 


Christopher’s Journal: A cold snap on February 14th caused significant damage to sensitive varietals, helping to naturally reduce yields. The growing season was warm and dry— in fact, the driest in recent history. This helped to produce clean concentrated fruit that saw full flavor development and fully ripe vines in areas that often struggle with too much moisture. While well drained soils struggled in some areas, harvest was early in many cases, which meant the grapes were largely in before the rains came on October 15th.

Gamay

Gamay may be one of the "cooler" grapes in the world right now with everyone scrambling to get it in bottle to capitalize. Currently there is very little planted in the Finger Lakes. I only know of 2 plantings and one isn't intended for wine. But there is lots of talk of more. The grape, like pinot, needs a lot of care to excel.
